Sunday Dinner

Bryce picked the meal this past Sunday evening. He chose another chili from our "Killer Chili" book (you can see the book here). It was from a restaurant in Banff, Canada and was SPICY! (but delicious!)

What goes better with chili than cornbread? Pretty much nothing. I made cornbread muffins to go along with the chili. I used my great-grandmothers recipe that my Mom always made when I was growing up. It's very simple and quick, but delicious. I thought I'd share for anyone needing a good cornbread recipe.

3/4 c cornmeal
1 1/4 c flour
3 t baking powder
4 T sugar
1 t salt
1/4 c oil
3/4 c milk
1 egg

Mix together, spoon into greased muffin pan. Bake 25 min at 350 deg. Makes 12 muffins.
